(Francisco Kjolseth | The Salt Lake Tribune) Todd Gardiner, co-owner of Taqueria 27, plans out seating arrangements at least 6 feet apart at his Foothill location in Salt Lake City, reducing his seating configuration to half on Thursday, April 23, 2020. Restaurant owners like Gardiner are getting ready to open for sit-down dining on May 1, or whenever state officials say it's OK. After being closed for several weeks, the restaurant opened on Thursday for takeout so it can get the kitchen up and running.
